Jahrtausende lang wurden sie von den uralten Thrakern bewohnt \u2013 eine Zivilisation, welche die G\u00f6tter Zagreus und Dionysus verehrte und den Wein bei ihren religi\u00f6sen Riten verwendete. Die Traditionen in der Weinherstellung werden bis heute fortgef\u00fchrt und heutzutage ist Bulgarien stolz auf seine qualit\u00e4tsvollen Weine \u2013 manche davon werden von unikalen \u00f6rtlichen Rebsorten und in beeindruckender Qualit\u00e4t hergestellt.<\/p><p>Wein geh\u00f6rt fest zur Geschichte Bulgariens, zur bulgarischen Kultur, Lebensweise und zum bulgarischen Geist. Die bulgarischen Gebiete sind die Erben von uralten Zivilisationen, die unausl\u00f6schliche Spuren in unserer Gegenwart hinterlassen haben. F\u00fcr die Thraker war der Wein ein wichtiger Teil der religi\u00f6sen Riten und ein Mittel zur Ansprache der G\u00f6tter. Davon zeugen zahlreiche Heiligt\u00fcmer, die im ganzen Land entdeckt wurden und wichtige Kenntnisse \u00fcber die uralten Riten und den Kult zum Weingott Zagrej liefern. Bulgarien ist stolz auf einige der bedeutsamsten arch\u00e4ologischen Entdeckungen, unter welchen die goldenen und silbernen thrakischen Sch\u00e4tzen, die zum gr\u00f6\u00dften Teil prunkvolle Weinsets darstellen.<\/p><p>Die Anwendung des orphischen Getr\u00e4nks bei religi\u00f6sen Riten geht auch auf lange Traditionen im Weinbau und in der Weinherstellung zur\u00fcck. Selbst in Homers Werk ist des \u00d6fteren die Rede von den vorz\u00fcglichen thrakischen Weinen.<\/p><p>Einzigartige Rebsorten sind:<\/p><p><strong>Gamza<\/strong> \u2013 eine regionale rote Rebsorte, die in Nordwestbulgarien am besten gedeiht \u2013 Suhindol und in den Gebieten um Vidin und Pleven. Die Traube von dieser Sorte reift sp\u00e4t und daraus werden Dessert- und Tafelrotweine mit einer kr\u00e4ftigen transparenten Himbeerfarbe und einem fruchtigen himbeerdominanten Geschmack hergestellt. Der Geschmack ist frisch, leicht und mag keinen Kontakt mit Eichenholz. Die Gamza-Weine werden gew\u00f6hnlich jung konsumiert. Die unterschiedlichen Sortezweige werden in Ungarn, Rumanien, Mazedonien angebaut, wobei die andere Bezeichnung \u2013 Kadarka \u2013 am meisten bekannt ist. Gamza-Wein von bester Qualitat kann in Weinkellereien bei Vidin (Bregovo), Pleven, Suhindol, Pavlikeni u.a. gekostet werden.<\/p><p><strong>Schiroka Melnischka Loza<\/strong> ist eine lokale rote Rebsorte, die allein in der Region um Melnik, Petrich und Sandanski gedeiht, da sie gegen niedrige Temperaturen nicht widerstandsf\u00e4hig ist. Die Farbs\u00e4ttigung der Weine ist mittel. Der Wein von dieser Sorte weist eine ausgezeichnete Qualit\u00e4t auf, begleitet von reifen Kirschen- und Kr\u00e4uter-Aroma und in Eichenf\u00e4ssern entwickelt sie Nuancen von Tabak und Leder. Der Geschmack der jungen Weine ist frisch und mit hervorgehobenen Tanninen. Der Geschmack wird beim Reifen milder, bewahrt jedoch die Note auf. Der Wein von Schiroka Melnischka Loza ist von einmalig guter Qualit\u00e4t und kann in den Winzereien in der Umgebung von Sandanski und Melnik gekostet werden.<\/p><p><strong>Dimyat<\/strong> ist eine f\u00fcr die Schwarzmeerregion typische bulgarische weisse Rebsorte, verwendet zur Herstellung von trockenen und aromatischen Wei\u00dfweinen und Destillaten (Schnaps, Brandy u.a.). Der Geschmack ist leicht und hat eine angenehme Frische. Diese Sorte gedeiht am besten in der Umgebung von Varna, wird jedoch auch in anderen Landesteilen angebaut. Dimyat k\u00f6nnen Sie in Weinkellereien in der Region von Varna, Shumen, Burgas, Pomorie u.a. genie\u00dfen.<\/p><p><strong>Mavrud<\/strong> ist eine sehr alte lokale Sorte,die vorwiegend in der Region des \u201eRhodopenkragens\u201c \u2013 ein Gebiet s\u00fcdlich von den St\u00e4dten Asenovgrad, Pasardshik, Plovdiv, im Vorgebirge der Rhodopen, angebaut wird. Ihr Wein hat eine purpurrote Farbe und ausgezeichnete Geschmackseigenschaften sowie eine ausgesprochene Dichte. Das Aroma ist saftig, wobei reife Waldbeere und Kr\u00e4uter vorherrschen. Diese Sorte gedeiht sehr gut in Eichenf ssern. Einige Weinkellereien in der Umgebung von Asenovgrad, Pazardzhik und Plovdiv bieten Kostproben von Mavrud von hervorragender Qualitat an.<\/p><p><strong>Die rote Misketsorte<\/strong><\/p><p>Die rote Misketsorte ist eine alte bulgarische Sorte, verbreitet uberwiegend in der Region am S\u00fcdhang des Balkangebirges. Das ist die frostsicherste bulgarische Rebsorte. Ihr Wein hat eine interessante Farbe mit rosaroten Nuancen. Das Aroma hat Rosen\u00f6l,- sowie Quitte,- und Honignuancen. Wei\u00dfweine aus rotem Misket k\u00f6nnen Sie in den Weinkellern in der Region von Karlovo, Banya, Straldsha und Sungulare genie\u00dfen. Neben der Herstellung von Wei\u00dfweinen ist die Weinsorte auch f\u00fcr die Herstellung von Dessertweinen, halbtrocken und von Weinen mit s\u00fc\u00dfem Geschmack sowie von Destillaten (Schnaps, Brandy u.a.) sehr gut geeignet. Sie kennzeichnet sich durch ein gro\u00dfes Potenzial zur Ablagerung und zum Altern. Das Destillat dieser Sorte gedeiht sehr gut in Eichen,- Akazie und Kirschenbaumf ssern.<\/p><p><strong>Rubin<\/strong> ist eine lokale Sorte, entstanden durch Kreuzung von zwei Sorten \u2013 Nebbiolo und Sira. Die Weine besitzen eine ges ttigte Farbe, der Geschmack ist kr\u00e4ftig und hat eine milde Note. Das Aroma ist intensiv, fruchtig, wobei der Duft der reifen Brombeere dominant ist. In Eichenf ssern gelagert, entwickelt diese Sorte Konfiturenuancen. Den Rubin-Wein kann man in den Weinkellern in der Region von Plovdiv und Septemvri kosten. Der Rotwein aus dieser Sorte hat ein gro\u00dfes Potenzial zum Altern sowie in Flaschen, als auch in Eichenf ssern.<\/p><p><strong>Pamid<\/strong> geh\u00f6rt zu den \u00e4ltesten Sorten, die auf unseren Gebieten gedeihen. Diese Sorte ist auf der ganzen Balkanhalbinsel unter verschiedenen Bezeichnungen verbreitet und f\u00fcr Weinherstellung und Weingenuss in frischem Zustand sehr gut geeignet. Der Pamid-Wein besitzt eine hellrote Farbe. Das Aroma ist frisch, hat eine fruchtige Nuance, elegante Struktur und eine milde Note. Wegen des niedrigen Phenol-Gehalts wird dieser Wein jung getrunken und reagiert nicht gut auf Kontakt mit Eiche. Diese Sorte wird oft bei Kreuzungen verwendet. Der Pamid kann in den Weinkellern in den Regionen um Pazardzhik, Pamidovo und Plovdiv gekostet werden.<\/p><p>Die bulgarische nationale K\u00fcche ist bunt und abwechslungsreich. Es handelt sich um Traditionen und Praktiken, die sich in den Jahrhunderten bew\u00e4hrt haben, an manchen Orten wurden die Rezepte von Generation zu Generation \u00fcberliefert, um jahrhundertelang unver\u00e4ndert zu bleiben. Typisch f\u00fcr die bulgarische K\u00fcche ist die gleichzeitige W\u00e4rmebehandlung der meisten Lebensmittel. Die Rezepte enthalten viel Gem\u00fcse und viele Gew\u00fcrze, darunter Knoblauch, Pfeffer, Thymian, Krauseminze, Bohnenkraut, Lorbeerbl\u00e4tter und Paprika. Manche Gerichte werden konkret zu bestimmten Festen aus dem bulgarischen Kalender zubereitet, wie z.B. am Heiligabend, zu Ostern, am Tag des Heiligen Georg oder am Tag des Hl. Nikolaus.<\/p><p>Die meist charakteristischen Produkte, mit denen sich Bulgarien international einen Namen gemacht hat, sind der Joghurt und der bulgarische Salzlaken-K\u00e4se, die in jeglicher Form ein untrennbarer Bestandteil der Speisekarte der Bulgaren sind.<\/p><p>Zu den bekanntesten und beliebtesten Snacks z\u00e4hlt die Banitsa, ein Bl\u00e4tterteiggeb\u00e4ck mit verschiedenen F\u00fcllungen, wie etwa K\u00e4se, Spinat, Reis oder Fleisch. Auch Eierkuchen, Buchteln, Mekitsi (eine Art Krapfen), in Ei gebratene Brotscheiben u.a. sind, serviert mit Konfit\u00fcre, Marmelade, Honig oder bulgarischem Joghurt, ein sehr schmackhaftes und beliebtes Fr\u00fchst\u00fcck.<\/p><p>Das in Bulgarien angebaute Gem\u00fcse hat hervorragende Geschmackseigenschaften. Deshalb haben die Salate in unserer kulinarischen Tradition einen hohen Stellenwert. Der bekannteste bulgarische Salat ist der Shopska-Salat, jedoch sind auch andere Salate eine Kostprobe wert \u2013 Sch\u00e4fer-Salat (Ovcharska Salata), Schnitter-Salat (Shatvarska Salata), Schneewittchen-Salat (Sneshanka), M\u00f6nchs-Salat (Kalugerska Salata) Dobrudzha-Salat, Salat aus gebackenen Paprika und viele andere.<\/p><p>Eine der beliebtesten Vorspeisen ist der Tarator, eine kalte Suppe aus Joghurt, Gurken, Dill, gehackten Waln\u00fcssen und Gew\u00fcrzen.<\/p><p>Auch isst man hierzulande gern Suppen. Eine unglaublich leckere Bohnensuppe wird in der Gegend um das Rhodopen-Dorf Smiliyan zubereitet. Interessante Fischsuppen kann man an der Schwarzmeerk\u00fcste und in der Donauregion probieren.<\/p><p>Bei den Hauptgerichten stehen Grillspeisen hoch im Kurs \u2013 Buletten, Hackfleischr\u00f6llchen (Kebapcheta), Schaschliks, d\u00fcnne Bratw\u00fcrstchen (Karnacheta) und andere. Sehr verbreitet sind zudem verschiedene Eint\u00f6pfe und in Tont\u00f6pfen zubereitete Schmorfleischgerichte \u2013 Chomlek, Kavarma, Kapama (in der Region Bansko) u.a.<\/p><p>Eine weitere Lieblingsspeise der Bulgaren sind die Sarmi (Rouladen) \u2013 gef\u00fcllte Weinlaub- oder Sauerkrautbl\u00e4tter im Miniformat, die vor allem in den thrakischen Gegenden Tradition haben.<\/p><p>Ein Markenzeichen der bulgarischen K\u00fcche ist der Lammspie\u00df (Cheverme), bei dem ein ganzes Lamm auf den Spie\u00df kommt. Dieser Spie\u00df wird vor allem in den Rhodopen gedreht, wird jedoch auch in anderen Regionen des Landes zubereitet.<\/p><p>Die Kartoffel hat einen festen Platz auf der bulgarischen Speisekarte. Weit verbreitet sind \u00fcberbackene Kartoffeln, der Patanik in den Rhodopen (Bl\u00e4tterteiggeb\u00e4ck mit Kartoffelf\u00fcllung), Kartoffeleintopf, Pommes frites u.a.<\/p><p>Auch wartet Bulgarien mit vielf\u00e4ltigen Wurstwaren und Delikatessen auf, unter denen der Sudzhuk (Hartwurst) am bekanntesten ist. Er wird in allen Regionen des Landes hergestellt, das Mekka der Sudzhuk-Herstellung ist jedoch die Stadt Gorna Oryahovitsa. Eine weitere Fleisch-Delikatesse nennt sich \u201eBanski Starets\u201c (der Alte aus Bansko), die, wie der Name schon sagt, im Raum Bansko hergestellt wird. Das Gebiet um die Stadt Elena und des Elena-Balkans wartet wiederum mit seiner \u201eFilet nach Elena-Art\u201c auf. Die Delikatesse wird aus gesalzenem Schweinefleisch zubereitet und in der Regel zu einem Glas gutem Wein gereicht.<\/p><p>Damit ist der Reichtum bulgarischer Speisen und Getr\u00e4nke jedoch l\u00e4ngst nicht ersch\u00f6pft.
